Your daughter won't be interested in anything other than her parents and daily life so........

What are your own interests? If you give us an idea we'll be more able to suggest things to suit.

I haven't been to Interlaken but in Lucerne I' d suggest you spend at least one full day exploring the historical centre, which has a great deal to see:

It's not a great time of year to visit Switzerland (cold and wet, short days), and Interlaken is really a summer destination, though it has good views of the Alps on a clear day. Lucerne has more things to see, and you can take boat trips on the lake and go up Pilatus from nearby. So I'd suggest spending more time in Lucerne than Interlaken.

From Interlaken you could make a day-trip to Bern.
On the way from Lucerne to Interlaken, you could spend a day at Meiringen to see the Reichenbach Falls, if you're a Sherlock Holmes fan. But maybe that would not be practical with a 2-year-old.
The train journey from Lucerne to Interlaken Ost (via Meiringen) is interesting in itself.

Taking a baby backpack for your daughter will make exploring much easier than having to use a stroller/pushchair all the time.
