With 35 days here you can do a lot, but it's winter so some days will be rainy, grey, cold and not very pleasant. At this site you have our local meteo, this link is for Faro (Monte Gordo will be similar)
At this site, you'll find info about tours and patrimony in the Algarve (go to downloads-see all, then Other Publications).
This link has a map with the location of golf courses (it seems that the closest to Monte Gordo are Castro Marim Golf & Country Club, Vila Nova de Cacela Golf Courses and Benamorgolf).
Here's some general info about Monte Gordo

Yes the weather here can be very variable at this time of year. On Thursday it was 20C , bright and sunny, now today (Sunday) is has been raining for hours and hours, the sky is grey and it's 13C. You wouldn't want to be on a golf course in this, so it's quite useful to have a plan B.

Bring some wet weather gear, but it won't be too cold.

Good advice above on the golf. Those courses at Castro Marim are only about 5 miles from Monte Gordo.

This website

has a good list of golf courses with prices. In addition to those already mentioned, there is Quinta da Ria near Tavira, about 13 miles/21 km away.

Are you self catering or staying in an hotel?

Either way there's a couple of other things I can mention. Your holiday spans Christmas and New Year. Be aware that on December 24th (Christmas Eve) everything shuts down early and that includes many bars and restaurants. When you get there, make some enquiries if you need somewhere to go that night. You will find places open on Christmas Day and the 26th is not a holiday here, so for most people it's back to work.

On December 31st, New year's Eve, you will find much partying.

On both those days shops close early. Monte Gordo doesn't have any large supermarkets. These are in the town of Vila Real de Santo António, 2 miles/3km. The big stores are open 9am to 8pm on average, seven days a week but this does vary, especially in winter.

How are you going to get around? Hire car is certainly a good idea, especially for trips to golf courses. Monte Gordo has buses and trains to the nearby coastal towns if a change of scenery is needed and you don't fancy driving all the time or wish to have a glass or three of wine with your lunch!

Finger's crossed for the weather and I hope you enjoy your trip.
