4 nights in Hong Kong - where to stay and what to do

We are a couple in beginning of the fifties. We will be coming to Hong Kong after 17 days in Singapore and Vietnam and would like to spend the last 4 nights of our trip in Hong Kong.
We are looking for recommendations on what to do, in which area to overnight and special restaurants.
We were looking at Hyatt Regency Sha Tin - how is the location?
Looking forward to your recommendations.

Tsim Sha Tsui is a good location in my opinion, we staying in the area where clad of restaurants. The Hyatt Regency Shatin is about 20 minutes from it but you are close to MRT station easy to get in and out. There are a lot of things to do in HK depends on your interest, I wish could paste my pages, but I'm on mobile

Halo. I'm from Hong Kong. The location is not bad, right next to a metro (MTR) station, making your trip easy, esp you can ride to Tsim Sha Tsui or Mong Kok within 30 minutes without change. Of coz staying in TST is much more convenient, but the price is also much higher. Any question feel free to ask, easier to find me in FB
