We are coming in on a cruise on a Saturday. We will be there all day and leave the next day mid-day. We have four adults and three small children (ages 1-5) and would like to do a self-guided tour of as much of Israel as possible, most likely staying overnight Saturday night. All the rental car
companies seem to be closed on Saturday (Sabbath) an almost all the tours are booked. Any suggestions? Thanks so much!!!
You don't mention which port you will be docking at. I am assuming you will be in Haifa which is in the north.
You are correct in noting that you will not be able to rent a car. All car rental offices are closed on Shabbat with the exception of the one at the airport.
Options you can consider are a private guided tour. You can work with a licensed driver/guide who will pick you up at the port, help you plan the itinerary so it's right for you, help you with all local arrangements, drive you around and guide. This will allow you to make the most of your time and considering that guides charge by the day not the size of the group the cost will be about the same or even less than the tours offered by the ship.
We will be in Haifa. We have been to Jerusalem before so were looking for something a bit different. The tours we found available are to Jerusalem. We wanted to get in as much as possible in a day (i.e. Cana, Jordan River, Sea of Galilee, Bethlehem, Capernaum, Nazareth, etc.). Any kid friendly tour suggestions? Thank you!!

I would suggest you skip Bethlehem as your time is limited and Bethlehem is south of Jerusalem. Stay up north and make the best of your time.
Oreet is giving excellent advice. When a friend was on a cruise I saw cruise tours were averaging150 per person!!! A guide with a vehicle will cost around700 give or take ( depending upon how many kilometers they drive) They would pick you up at the cruise and return you there when done. They will also help you decide on an itinerary. Then, on your 1/2 day of Sunday you could do some touring of Haifa on your own. The cruises tours being sold out may be the best thing that could have happened.
