I would still say get a lonely planet guide book for Morocco and have a look - then make some contact with places you like the sound of.
Footprints has been fairly good too and Rough guide guidebook has improved a bit.
theres a lot of commercial hotels in Casa, LP will help with finding something with a bit of character usually. the Ibis has a couple of hotels - commercial of course.
I find hotels in Casablanca expensive. I tend to use the Maamoura, which is more or less 3 stars. It's in what's left of the once glamorous art deco quarter.
The airport hotels were pretty dreadful last time I I tried them.
There are a couple of efficient Ibis hotels, one very central, one in a business district on the airport/Marrakech road.
