We are visiting Bayeau on May 18 or 19th 2016. Is the Cathedral open between 10 and noon?
Does the organist practice in the morning on particular days of the week? We would change our dates so we could hear the organist
That would be a Wednesday and Thursday. There are no Masses in the Cathedral at Bayeux on those days so it is possible the organist might rehearse some time then. I'm not sure what your chances are of happening in on him/her. The Cathedral is open from 8:30 AM to 7:00 PM all year.
You can e-mail them at [email] and ask if they know the organist's rehearsal time. If you are an organist, you might want to initiate a meeting. If you write in English, they will respond in English. I usually try to write in both French and English to give them an option and if you speak French, that might help them.
We've never heard the organ but had a wonderful experience there once when we visited the crypt. A woman was sitting in the crypt quietly singing the Offices to herself. Added to the beautiful frescoes in the crypt, it was a wonderful experience.

Most churches have a web site or at least a web page for their music. I can't find one for the Cathedral so e-mail is probably your best choice.
