Granada Hills, California
I would love to travel out of state (current in CA) and considering options like Thailand, Ireland, etc.
The only caveat I have is that I'd love to find a place that is vegan-friendly. Ideally that works with someone on a budget (like thailand) for hostels/living from for 1-2 months.
you can also choose India. It is a interesting place for those who loves different culture, different food, different people. You can feel the drastic changes in culture and food from one state to another. There has been 28 states in India, where you can enjoy mountains and snowfalls at Jammu & Kashmir Leh Ladakh Tours, desserts and royal culture of India at Rajasthan ,beaches at Gujarat Goa Kerala ,the capital New Delhi which is full of historical places, vegan food and the North East region Assam Manipur has its own different culture.
So in all you can enjoy at fullest on very reasonable rates, with lots of options.

Jamaica is quite vegan/vegetarian-friendly. Many Rastafarians eat an "ital" vegan diet.
World wide there are a growing number of excellent Vegan hostels, guesthouses and hotels. www.veggie-hotels.com is a great source of information on these delightful places to stay and enjoy local veggie food.
