Where do the locals in Taipei go to eat? I want to eat what the locals eat while I'm there!
Take a look at this question on Taipei Night Markets for a good list of those. I especially like the Raohe St night market and Ning Xia Night Market for food selections. Shilin Night Market has some great dumplings and other foods as well, be sure to check the stalls as you head up Wenlin Road, and not just what you find in the food building.
There are good restaurants almost anywhere you go, we usually just find one that looks to have a decent crowd.

Shilin Night Market is the best place to be in, lots of awesome local food. You can try 王子起士马铃薯, prince cheese potato, a local dish made with potato and hot cheese, you can choose you own flavour, such as corn, vege, bacon, egg and etc.
The most authentic Taiwanese cuisines in Taipei are from the night markets (yeshi). Different night markets have different specialty items. Generally, try their big crispy fried chicken, milk tea, mango snow ice... Actually, just try everything at the night markets, they are authentic, affordable, and awesome.
If you are looking for a restaurant which is indoor and you can have a great dinner experience. I will recommend Din Tai Fung.
The restaurant had been reported by CNN and it is famous for “little steamer dumpling” which skin is transparent and taste juicy inside the dumpling. Taiwanese love it!
Usually we need to wait for long line for a meal in Din Tai Fung, however it deserved!
