My best friend and I will be in Santa Fe for Labor Day. She's a vegetarian and I'm not so we need a mix of places to eat. She's OK with fish, so any seafood restaurants are fine, too.
If you have different dietary needs you might want to check out Santa Fe Plaza. Known as the quintessential gathering spot in Santa Fe, this is a perfect place to get your bearings, unwind or simply hang out for the day if you like. Great mix of cafes & cafes and incidentally, a small park.
These places aren't vegetarian, but you may be able to find some seafood. Tia Sophia's is good for a classic New Mexican breakfast. El Parasol has served authentic New Mexican cuisine since 1958... try the puerco Adodvada and handmade tamales. Bobcat Bite serves an amazing cheeseburgers covered in green chili, I need not say more. A perfect road trip lunch stop.
