I agree with Peter, I've driven that route and it's interminable. New Orleans was the only thing memorable, although if I did it again I'd explore Baton Rouge as well. In Florida, you could stop in Gainesville It's a big University town with some good restaurants and craft breweries. Check out funky Satchel's Pizza or Public & General gastropub. You could also make a stop in Mt Dora – it has a cute arts and dining district downtown. Check out the Modernism Museum while you're there for something different and unexpected.

I am guessing you are taking I-10, there are long stretchs with few areas to pull off and stop. Places I would hit are New Orleans, Biloxi, Pensacola. If you drive along the coast of Florida panhandle there are a number of nice little towns and beaches.
