Hi Philip,

I just got back from Belize. I'm not sure what your price range is - but here are some mid-range recommendations:

San Ignacio - Cahal Pech Village Resort Awesome view of San Ignacio from atop a hill. I recommend the private cabanas if you can swing it. The regular rooms are sufficient though, all the same amenities. The staff is attentive and its the best (free) breakfast I had in town.

Caye Caulker - Seaside Cabanas Again, I don't know your price range but this place is gorgeous for the price.

I also stayed at Caye Caulker Plaza Hotel which everyone raved about for its central location. In reality, everywhere you want to go on the island is within walking distance (you don't need a golf cart here, as opposed to San Pedro / Ambergris Caye) and though it was affordable, it wasn't very happening.

Another option is Popeye's Beach Resort. http://www.popeyesbeachresort.com/ It's right along the water, from the main water taxi terminal but just apart from the main foot traffic. I liked the location - right around the corner from the I & I Reggae Bar.

Have you considered Airbnb

In Playa del Carme, Hotel City Express Playa del Carmen Oficial is decent for the price. In Tulum, I stayed at Hotel Andreas Tulum and thought it was a good place, and pretty inexpensive.
