Best does not mean fine dining, it could be a total dive.
On the high end, Riverhorse is great. For good barbecue and more casual, I like Bandits Bar & Grill. Finally, for a good local feeling bar with decent bar food, No Name Saloon & Grill is a good spot. All of these are on Main Street, so lots of things to walk to before or after dinner.

I second No Name Saloon & Grill - we often end up here more than once during our Park City visits. The "fat kid" pizza at Maxwell's East Coast Eatery with fresh ricotta is one of my favorites! Oishi Sushi Bar & Grill in the Marriotts Summit Watch has delicious sushi - my brother's Japanese girlfriend would always take us there.
I've had really good old school dining - fondue, escargot, schnitzel - at Adolph's but its definitely more expensive. If you're going high end, The Farm at Canyons is a great spot. We enjoy the bar at High West Distillery & Saloon.
It's not in Park City but if you're driving to/from the Salt Lake City Airport, you should try to make time to eat at the Red Iguana in SLC (NOT related to the Blue Iguana in Park City!!). Don't do the one in the mall, head for the real deal on the road to the airport. EPIC. And spicy.

High West Distillery & Saloon is terrific. Always good food, always a lot of fun, and unfortunately always mobbed. They don't take reservations either, and waits are usually 45 minutes up to 2 hours - you have been warned. For low cost but very good, real deal Mexican, El Chubasco is great - but it's not a "night out." It's in a strip mall. A great but pricey steakhouse is Edge Steakhouse up in the Canyons resort area.
