My husband and I are planning our honeymoon in Nicaragua this December for 8 days. We would like a taste of the Caribbean (corn Islands) but are thinking we should also see the pacific side. So far we are thinking:
San Juan Del Sur/Playa Maderas OR Emerald Coast
How long should we stay in each place/what shouldn't we miss? Looking for a nice mix of relaxation/culture/adventure while being aware of budget as well. HELP!
It depends on your budget - but I think you are missing some highlights. Answering you question with the fact it is a special trip (honeymoon ) the min number of nights I would suggest:
A) Little Corn Island - min 3 nights - AMAZING - specially if you are well traveled and have seen much of the Caribbean
B) Isla De Ometepe - min 2 N but recommend 3/4 N if you are hikers - a unique opportunity to hike 2 volcanoes in the same small island. Accommodation here is tricky - few nice hotels. fav is San Juan de la Isla.
C) San Juan del Sur/Emerald Coast - 3N in either three good properties varying in price - Mukul - Luxury Resort & Spa, Morgan's Rock Hacienda & Ecolodge, and Aqua Wellness Resort - this latter is being transformed into a Senses property so if you visit it now you will get an amazing dream before it becomes a higher priced ultra luxury property (as Mukul is)
But you are missing two of the jewels of Nicaragua in:
1) Leon - 2/3/4 N Fun thriving very affordable city - were you can go to beaches, climb and surf down volcanoes (Cerro Negro Volcano), an out-of-this world art museum and $1 mojitos/$6 meals both of high quality... Stay at Hotel El Convento
2) Jicaro Island Ecolodge an island off Granada - 2/3/4/5 N depending on your budget - the more the better. Hands down the most not to be missed experience in Nicaragua - specially on a honeymoon - not enough words to describe why it is soooooo magical. You should end your honeymoon adventure here!!!
Even more important of what and where you visit is the order in which you do so. There is an amazing travel agency that are true masters of the order and Nicaragua. They are based in the USA - they are a wholesale adjective that primarily sells to other agencies but they might be able to help you if contacted directly and told you were a previous clients referral and that you have not been working with another travel agent. The agency is Toca Travel - ask for Bonnie - loved her.

Both coast are different and quite nice, Corn Island is just the caribean white sand beaches, turquoise waters, coconut trees and drinks with umbrellas but if you have the chance to go to Little Corn Island Yemaya Island Hideaway & Spa will be even better.
The pacific side is nice too but San Juan del Sur looks like a frat college beach kind a thing sometimes and the parties at night times are the same so no relaxation at all at this beach, so go better to the Playa Maderas or Playa Marsella which is more intimate and relaxing of course if your budget allow you the all inclusive Mukul - Luxury Resort & Spa is the best spot on the Pacific.
