Heading to Melbourne for a week or two and I want to try all the best local restaurants and dishes. What do you guys recommend for me to get the most out of Australian cuisine?
I would recommend visiting as many cafes as you can - coffee in Melbourne is great and cafes offer some pretty amazing breakfasts/brunches/lunches too. The Kettle Black for food pretty as a picture (hot cakes with flowers and fruit on top!), Shortstop Coffee & Donuts for donuts, Lune Croissanterie for the best croissants in town (but only if you don't mind getting up at 6am and driving to suburbs), Operator25 for great food (Coconut Sago with Fresh Berries, Pineapple Salsa, Coconut Chips and 10 Mango Foam is the bomb) and one of the best coffees in town, Brother Baba Budan for hipster coffee and small sweet treat - good afternoon pick me up.

Interesting turn of phrase - Australian cuisine! Apart from some uniquely Australian ingredients, our cuisine is a total mash-up of influences around the world. Wonder what your budget is? There are some amazing restaurants/food experiences but they can be pricey. For dining with a view, you can try Vue de monde or, if that's out of your price range, go to The Lui Bar (on the same floor) and have a cocktail and the amazing barramundi sliders.
Australia's top ranked restaurant internationally is in the Melbourne suburbs. Attica is an extraordinary experience and showcases a lot of locally grown and foraged foods.

- Mart 130 in Middle Park, Melbourne has the BEST brekkies! I used to go there almost every weekend. The setting is pretty unique as it is along the tram tracks
- If you are there between June 3rd and August 26th, go check out the Winter Night Market at Queen Victoria Market, it's incredible!
- Hunky Dory Fish & Burger Bar (I used to go to the one in South Melbourne) does great fish and seafood dishes that leaves you feeling healthy and filled up!

Melbourne is a very diverse city. It depends what you mean by Australian cuisine. For things like kangaroo, shark, camel and other exotic meats then going into the outback is best for this.
There are some great food places in Melbourne. The first one that springs to mind is Naked For Satan. It has $2 (sometimes $1 depending on the day) pintxos and a roof terrace with one of the best views of the city. They also brew their own beer; Australia has a huge craft beer industry. And Fitzroy is a great suburb with a real buzz about it.
