What are the "must do - must see" things in Maui?

My wife and I will be in Maui in December, what do you think are the coolest things to do while we are there? We like it all...adventure, relaxing, exploring, kicking back. W especially like getting off the beaten path and doing some of those "local knowledge" things. Budget friendly is also a big plus!

There's some great snorkeling in a protected area, called Ahihi Kinau Natural Area Resv, just south end of Wailea. Strangely, it's right next to Steven Tyler's house.

I stayed in Kihei and loved Maluaka Beach. If you want to feed your explorer spirit you have to take one day to visit the upcountry. It offers a stunning landscape away from tourists. Stop for lunch at Kula Bistro to taste delicious fresh local dishes. Last but not least Iao Valley State Parkwill take you to a sacred world made of mysterious mist and lush green.
