My top 3 would be the following:

1. Umami Burger

Awesome burgers, both "classical" and more modern takes. My favourite is the Manly Burger (pictured) with a Mexican coke (the one with cane sugar) - this is actually my favourite burger in the world.

2. Rustic Canyon Wine Bar

Great place for both burger-eaters and those who prefer something else. More upscale, but casual and a nice location. Best non-burgerjoint burger I've had in California.

3. Father's Office

Awesome burger, beers and very relaxed joint. Can't complain.

Wild card: In-N-Out Burger

Father's Office is a must-hit. It's not my personal favorite, but that's a matter of taste/opinion. A lot of friends swear by it; it's just not my favorite. Be aware: No ketchup, you take the burger exactly as served/no substitutions. Great bar.

Umami Burger (has a million locations) is good, though it can be hit-or-miss. They seem to rely a bit much on "trendy" food items (they had a long truffle oil run), but some of their specials are great. Beer selection is very underwhelming.

The Golden State should be on more lists but it's not. Great burger. Small place, crowded, but the food is good.

Grill 'em All is way out in Alhambra and is definitely a monument to excess. Eating their burgers will take a measurable and significant amount of time off your lifespan. These guys won a food truck competition and it's good. If you didn't have an '80s-early '90s love of heavy metal, part of the appeal will be lost.

Plan Check Sawtelleis also great. This is kind of a fresher (conceptually) version of Umami burger. Lines and wait can be bad.

Bowery is criminally underrated and I think has one of the better burgers out there. Served on an english muffin, very simple, but just exceptionally tasty.

Less gastropubby winners would be The Apple PanAstro BurgersIn-N-Out Burger, and always keep your eye open for small stands and dives. They can really impress.

Fusion Burgers in Highland Park. (Plus, then you get to go to Highland Park, the best neighborhood in LA.)  They have a great menu of really different burger creations, including a veggie burger that I'm obsessed with made with a breaded goat cheese thing - so good!

I've heard nothing but rave reviews about Father's Office, especially when it comes to proper beer pairings with your burgers.

Besides Umami and Slaters 50/50 there is a place near the Santa Monica Pier. The Misfit Restaurant + Bar. They have a terrific burger, but don't miss out on the chorizo Mac-n-Cheese and the bacon wrapped dates!

I haven't had a chance to try the places mentioned in previous answers, but I will hopefully do that soon.

The best burger I ever ate in Southern California was at a Burger Lounge : http://www.burgerlounge.com/
