I lived in Santa Fe for 5 yrs, breakfast on departure you should go to Counter Culture, if you just want fast out but local sweet treat and coffee opt for, Whoo's Donuts. Both are less than 5 mins from Inn of the Governors. Make sure you have reservations at The Shed or it will be a long wait. It's a great representation of Santa Fe but everyone wants to go there.  A backup plan, also downtown is a real small family joint, LeAnn and Raul are the proprietors at El Callejón. Tell them Kerry from Dallas sent you.  You will find the Saloon at the inn of the Governor's full of local characters.
Have fun. Santa Fe is special.
It doesn't look like you're going through it but if you happen to find yourself in Amarillo on the return trip at the I 40 and Western exit is a burger joint called Blue Sky. This is my favorite burger joint in the world.
