It really depends on what time of the year you want to come! Death Valley National Park and Valley of Fire State Park are beautiful and great for hiking. Red Rock Canyon National Conservation Area is west of the city, but definitely something to see. If you come in the middle of the summer I wouldn't recommend those places because it will be HOT (easily 120 F!). Hoover Dam  is right outside of the city, but again...walking around in the summer is not always pleasant. Grand Canyon National Park is a easy drive from Vegas as well as Zion National Park. You can also drive to Bryce Canyon National Park which is beautiful! Lake Mead is really fun for boating, skiing, etc. Mount Charleston (Nevada) is a great respite from the heat if you do come in the summer and fun for sledding/skiing in the winter. You just have to be mindful of the need for snow chains in that area depending on the amount of snow.

Cold Creek you can find it by typing in cold creek fire department. They often have wild horses wondering around out there. And Mount Charleston (Nevada) is a great trip to escape the heat.

Mount Charleston (Nevada) is a fun drive with beautiful scenery. The lodge at the top is an iconic lunch stop. If you go around towards the ski hill and camping area you might see the wild horses that roam the mountain.
Valley of Fire State Park is another gorgeous scenic drive with several places to hike and rock climb.
Lake Mead National Recreation Area is about 45 minutes to an hour out of Vegas. It is a serene desert landscape with a winding road that loops around Lake Mead. Lots of hiking and picture opportunities.

NYT article last week had 2. One was old train rails (Historic Railroad Hiking Trail) used to build Hoover Dam that are outfitted with pedal yourself cars. Scenic and low effort. Another was a nature hike in volcanic Red Rock Canyon National Conservation Area
