We're stopping in Vegas for 3-5 nights with two girls (9 &11) on our way to Florida and want a 1-2 night outdoorsy canyon experience nearby where they can ride a mountain bike/ATV/horse/mule but have someone look after us ie. not have to drag gear or hunt & cook our food. Could be tenting under the stars or cabin / ranch styles.
Any good ideas for some authentic wild west treatment without busting the bank?

There are a lot of things that you can do that don't cost anything - Bellagio Hotel has a conservatory that is filled with flowers and plants if you like that. Ethel M Chocolate Factory & Cactus Garden in Henderson is a drive away form the Strip but interesting if you like all kinds of cactus and like chocolate too. Of course, everyone has to see the fountains at Bellagio Hotel. It changes every show at 15 minute intervals. The lions at the habitat in MGM Grand Las Vegas is also interesting. That is on the Strip.
If you want good places to eat, try the buffet at the Sunset Station Hotel And Casino. It is the best one but all of the Station Casinos have good buffets.
Red Rock Canyon National Conservation Area in interesting for a drive. It takes about 30 minutes outside of Las Vegas and you can also visit Bonnie Springs Ranch. They film Old Western movies there.
Fremont Street Experience is always fun and will take you downtown with an overhead projection on 6 blocks downtown. You can also catch the acts in Circus Circus Hotel & Casino. They perform overhead and there is also a big Video arcade there.
