I haven't been to Laos, but I have been to Cambodia and can say that Angkor Wat and Angkor Thom, though "touristy," are absolutely worth seeing. Sihanoukville is a low-key beach town that is off the beaten path (for now) but just now being noticed by travellers. It's a great place to unwind for a few days.

I would suggest that you take the overland trip from Vientiane to Angkor Wat. And take it down through Laos via Savannakhet and Pakse. This is a route which is still not too touristy and you can also stop and relax at 4000 Islands Bar just before the bordet to Cambodia. Also, the town called Phonsavan in north Laos is really interesting and quite off the beaten track.
