Any tips on what to get up to in Tel Aviv and whether it is a nice time to visit this time of year...

Israel in winter? The answer should be yes. Israeli winters are quite mild, worst thing you might face weather-wise are some rains. We love snow but it comes only to our higher peaks. You can ski on the Hermon, and the day after water-ski at Eilat on the Red Sea, quite cool. If you are lucky you may hit some snow in Jerusalem - it only comes for a couple of days and it's beautiful. To sum it up - we love our winters, and so will you :-)
Otherwise, referring to a question you asked elsewhere on Trippy "would you go to Israel", as long as you are talking about personal safety, you should have no concerns whatsoever. Israel IS a safe place, and in case anything should happen it's at very specific, restricted areas where you have no reason to visit as a tourist anyway, so at least from personal safety point of view - Israel and especially Tel AvivTel Aviv are as safe as any other place in the developed world. You may want to follow SweetTelAviv for tweets from... right ;-)
Off the beaten track Israel: Being a tiny country, off the beaten track options will never be more than two hours' drive distant, and yes, we have some beautiful options here.
