Taking a road trip for my move and want to make the most out of it. Where should I stop along the way?

You have so many options depending on the number of days you want to spend on the road and where you will end up in Florida.
One of my favorites is NYC then Washington DC with an extra day to continue to Williamsburg, VA then Savannah, GA then St. Augustine, FL or Amelia Island then your final destination.
If you will be heading to the West Coast of Florida, you should consider visiting the natural springs in north Florida such as Ichetucknee Springs just north of Gainesville (close to where I-75 and I-10 intersect).  Pristine springs and rivers that you can float down and gaze at mossy covered Cypress trees and lots of wild life.

To best answer your questions, we would need to know your destination in Florida and also the number of days you plan to be on the road.
Here are some of the places I would stop when on a road trip to Florida when driving on I-95:
Philadelphia - the City of Brotherly Love to explore Independence Hall and eat the famous Philly cheesesteak
Washington, DC - get to know our nation's capital. Visit the Smithsonian museums (they are free) and iconic buildings. I suggest getting a reservation in advance to visit the U.S. Capitol. Here's the info:
Columbia SC - plenty of free indoor and outdoor activities. Check this out:
Savannah - for southern food and historic sites (and parks)
