Where to visit in Ecuador and what will the weather be like?

We have 3-4 weeks in South America in December/January, where should we visit in Ecuador? Sadly I don't think there will be enough time for The Galapagos. What will the weather be like?

We are spending January/February in Cuenca (Ecuador) it is one of the most livable cities in Latin America. It's safe, charming, easy to get around, extremely affordable, and the weather is always mild (never too hot or too cold). Our apartment in the historic city center costs about 40% of what we'd have to pay for something back home in Portland, Oregon. 3-course set lunches are only $2.50 here and there are bakeries on every other corner. El Cajas National Park is a quick day trip near town, and Ingapirca ruins are two hours by bus ($3.50). We also did a week of Spanish lessons at a non-profit school called Yanapuma. There are many in the city to choose from. Two years ago, we went on a trip to Galapagos and stayed 2 days in Quito. The weather in Quito was perfect, not too hot and not too cold, probably in 70s (F). We enjoyed walking around, took plenty of pictures and enjoyed our stay. There are plenty of things to do near by Quito, like the rainforest, local bazaar etc.

In Galapagos, the weather was great but the water was cold. We had a hard time snorkelling
