I'm in Denver for a weekend soon and haven't been in quite a while. What are some of the top foodie/drink spots (think hole-in-the-wall, food trucks, breweries, distilleries, and beyond)?
Three of the best meals I have ever had in Denver were at Z Cuisine & A Côté,
Euclid Hall Bar & Kitchen is very solid and fun place and Domo Japanese Country Food Restaurant is fantastic (much more of a food place instead of drinks, go for lunch), my cousin lives in Japan and this is the only place she will get Japanese food when she visits.

The remodeled LoDo has some great restaurants covering all price ranges and the old ticketing area has been turned into a bar serving a dozen plus microbrews from Colorado. The River North Art District (Rino) area has more than its share of breweries, all within walking distance of one another. First Draft, in Rino, is a self-service, pay-by-the-pour beer bar which is a great way to try a bunch of beers.
Acorn! This is my favorite spot because the food is great and the atmosphere is so fun. Check out Cart-Driver too, super small but its really cool inside and they have amazing pizza.
