Best places to visit & eat on the road

We are planning on driving to Denver from Phoenix. We will arrive Wednesday and come back Friday so just a short trip. Does anyone have any suggestions of what to do or where to eat?

What part of Phoenix will you be staying in? If it’s really in the City of Phoenix, be specific as to what part of town. There’s no need to drive for an hour to get to any restaurant in the ‘greater Phoenix’ area. We’ve become quite the foodie destination, there’s top rated restaurants all over.

We did this exact road trip this past Christmas. Jerry's Cafe in Gallup is a MUST!  If you can manage to soak at Riverbend in Truth or Consequence then, by all means, take the extra time. Such a magical place.

For a 2 day drive, you probably want to stick to a straightforward route:
If you leave Denver on Wednesday, then I'd probably stay in Albuquerque on Thursday, and get back to Phoenix on Friday.
Albuquerque has an amazingly clean downtown that's nice to walk through, with the mountain view around you. For simple, cheap New Mexican classics, try Frontier Restaurant. If you want something nicer, try Los Poblanos Inn & Cultural Center for an interesting stop and fine dining.
You could also try Santa Fe as the midpoint stop.
Going from Phoenix to Denver, the main recommendation I would have is Colorado Springs and Pikes Peak.
