Bars and restaurants unique to Denver

Looking for the most unique and/or local bars and restaurants in trendy, walk-able areas of town.

All of downtown is accessible from where ever you stay as their is a free hop-on, hop-off bus that runs the length of 16th street. Unique restaurants are all over, but my favorites are:  The 9th Door, Vesta Dipping Grill, Osteria Marco, Euclid Hall Bar & Kitchen, Rioja, Lime an American Cantina & Tequila Bar, Bistro Vendome.  A fun bar I have always enjoyed with great infused vodkas is The Polished Tavern.  If you are in the highlands area, it isn't so much walking but there are great restaurants and bars there too.  Let me know if you are interested in a few places up there....

Mercury Cafe is awesome for brunch, and nightly dance lessons. Its has a retro / beatnik feel and the food is great. I've been doing swing dance lessons this year and it's definitely one of my favorite places in Denver
