I have no idea destinations in Central America. Looking for good food, good beaches, reasonably cheap and things to do. Im open for anywhere as long as the flights from Seattle are reasonably too
I completely agree with everyone's Nicaragua recommendations. I've recently returned from two months travelling there. It's a country with everything from mountains, beaches, volcanoes, colonial cities, rainforest, friendly people. I wrote about it here:
For flights, I flew with Spirit down from the US - they do some cracking deals, albeit with very unsociable flight times!

I would def. recommend Nicaragua. Beautiful country, nice beaches, great mountain area, good coffee, volcanoes, lakes, great people!! Still not too pricey etc.
I travelled for two months in Nicaragua. I loved it, its very authentic. But its one of the poorest countries in central america so you can not expect very big luxury. There are beautiful accomodations (like hostels) to sleep for very reasonable prices and great quality! The beach near Leon is good, San Juan del Sur is pretty. But i love whole nicaragua, also the forest and Isla De Ometepe!
If you really want to see the most beautiful island groups ever seen: go to the San Blas Islands. It's above Panama. I sailed there from Panama to Colombia with a catamaran ( 3 days around the islands, 2 days open-sea crossing). And its the most fantastic place. I have seen in 7 months!
