Looking to do a winter trip to Cabo to do some fishing, hanging out by the pool and eat some great fresh Mexican food. I've never been to Cabo so any inside tips would be appreciated.
Hey Shayne, on the high end, the Capella Pedregal is amazing. One of my favorite hotels is the Hilton Los Cabos Beach & Golf Resort. Its a little out of town, but it is a fantastic hotel that I think gets missed by many people. One of the better value luxury hotels in the area. Both of these hotels wold be great with or without kids.
If you are going without the kids, want close access to town and are looking to party like its 1999, the ME Cabo (ME by Melia) is a good choice. Hip hotel right on the main beach, with great views of the iconic Lands End ... you can walk right out of the hotel and grab a bite or (many) drinks at The Office and Mango Deck which are the classic beach restaurant/bars on Cabo's main beach, there's water taxis on the beach that can take you to Lover's Beach into town by the Marina Cabo San Lucas. I would only choose the ME if you want to party it up. Otherwise, the other two are a better choice.

We absolutely love the Hilton Los Cabos Beach & Golf Resort in Cabo. It's between Cabo San Lucas and San Jose del Cabo. The hotel is very nice, service is always wonderful, and the infinite pool looking over the ocean is very relaxing. Several very nice restaurants on the hotel corridor, with a party atmosphere in Cabo San Lucas and a very quiet and quaint authentic Mexican town in San Jose del Cabo. Can't speak to the fishing, but I know fishing outings are a big business from the marina in Cabo San Lucas.

My choice in Cabo San Lucas would be the Palmilla. It is a One & Only resort, and I have enjoyed several of their resorts besides the Palmilla, like the Ocean Club in the Bahamas, the One & Only Reethi Rah in the Maldives, the One&Only Le Saint Géran. It is a top shelf resort and well worth the visit.
