Hi Peter,
I was in Ballarat many years ago. These are the interesting places I visited:
1. Sovereign Hill - It's an open-air museum showcasing the discovery of gold mining in Ballarat in the first 10 years (from 1851). I had a chance to try gold panning in Red Gully Creek and visit the Gold Museum. 
2. Art Gallery of Ballarat - Australia's oldest regional gallery with a collection of Australian art.
3. Eureka Centre - historic site of the 1854 Eureka Stockade (the fight between gold miners and the authorities).
4. Ballarat Wildlife Park - see Australian wildlife like the Tasmanian devils, kangaroos, wombats, and koalas.
