Well there are many options here. The hot spot is Franklins BBQ, one of the best in the U.S., but since it is so popular, there is a 3-4 hour wait in line to order food. Better options if you want a true Texas experience might be: 1) Sam's BBQ, 2)Salt Lick BBQ (20 miles outside of town in Driftwood but worth the drive, 3) County Line Barbeque, 4) Iron Works BBQ or 5) Stubbs BBQ (both downtown near 6th street). Safe travels here and enjoy!

Stiles Switch BBQ & Brew is amazing! The best in my opinion... They don't run out of food and there is usually no mile long line!

Brian C gave a great answer below. I'll add that the best beef ribs in town (arguably) are at La Barbecue and John Mueller Meat Company. Both also have very good brisket but not up to the level of Franklin's in my opinion.

Welcome to Austin and bon appetit!

Franklins BBQ if you don't mind a long wait. If you're up for a quick 20 mile drive to Lockhart, TX (southeast of austin) head to Smitty's Market. Just off the town square in Lockhart. The real deal! The Best!! The Iron Works BBQ on Ceasar Chavez in downtown austin is also very good.

Without question, Franklins BBQ gets all the attention and press. I haven't eaten there as I haven't stood in a line for three hours since the original Star Wars was released.

So, I recommend Black's BBQ if you need to go somewhere in Austin.

If you can handle a bit more of a drive, make the trek to Salt Lick BBQ. The BBQ is very good, and the experience is second to none.

Another trek worth making is out to Lockhart. It's a small town about half an hour south of Austin, and offers the Big Three of Central Texas BBQ: Kreuz Market, Black's Barbecue (original location of the place listed above), and Smitty's Market.

The truly adventurous (and hungry), will try all three in one trip.

One thing non-Austinites should realize is that the competition for BBQ in this town is so fierce that anywhere you go is likely to be better than what you find in all but the best places outside Central Texas.

Pro Tip #1: Request "moist" brisket. This comes from the point of the brisket, is fattier, and tastes better.

Pro Tip #2: Ask that they don't cut the sausage for you. Cut it yourself at the table, so you don't lose the juices.
