Dining advice for Amsterdam

Will be staying near the Aquadam Marina Hilton in July 22-24.  Looking for places to eat with consistently good food. Budget $$-$$$.  Do places close down for summer like in Paris? There is no diet concerns. We usually like many things.

We recently had a great dinner at Wilde zwijnen. Lovely, buzzing atmosphere, very friendly, food was inventive and delicious. We got the chef's tasting menu—very affordable. It's not in the center, but was easy to reach by tram. Also, check out Bon Appetit's recent feature on best new restaurants in Amsterdam.

I recently went to Hannekes Boom…sinds 1662, a nice restaurant / bar with places to sit outside. Very relaxed, a bit outside of the busy city center (near the train station). 

Very nice people, relaxing atmosphere, delicious food.

I would highly recommend De Carrousel. They have awesome pancakes that resemble crepes and the atmosphere is very nice!
