Firstly I suggest that you have a look on the Guide of Thessaloniki as a start.

Whatever you do, don't miss Vergina!! Even if the weather is wet/cold so that you don't want to spend much time outdoors at the archeological site, the Vergina museum is absolutely amazing, well worth the trip on its own. The museum is built inside a huge burial mound, you see the actual tombs where King Philip's treasures were found, and then you see the treasures themselves, the most wonderful gold jewelry etc, beautifully displayed. One of the best museums we've ever been, anywhere. It's not far from Thessaloniki, you could do it in an afternoon or combine it with Pella check first, because the Pella museum was closed when we were there in October, not sure if it's open by now.
Also Veria and Edessa regions, Lake Kerkini near Serres. There is so much you can do.

Yes, greekcypriot is right. An excursion to Vergina in May is an absolute experience especially in May. While there, don't forget to visit the Byzantine Museum of Veria --very close to Vergina-- that is housed in an old mill. For other sight within the city of Thessaloniki, you might visit my Thessaloniki travel page. Have a nice time there!

As mentioned above make sure to visit Vergina. One of the best archaeological sites in Greece. As i saw you'll be there for a week. If you have extra time another good suggestion is loutra Pozar (Pozar hot springs or loutra Loutrakiou) 100klm and about 1.10h from Thessaloniki. Something diferent from other places you are going to visit, but don't forget your swimming suit.
