There are SO many. So much good sushi in Seattle. It's not a "hidden gem," but a fun happy hour and tiki/sushi place is 'Ohana. The thing about it and a lot of the other sushi places, and just Seattle in general, is that there are so many great happy hours. A few others that are fantastic:

Nijo Sushi Bar & Grill, which was listed below.

Japonessa for its happy hour sushi menu.

Nishino, which is way off the beaten path, but one of the best in the city.

Mashiko, located in West Seattle, but worth the trek, because it too is one of the best.

Nijo Sushi Bar & Grill near the waterfront is my favorite. It's a sit-down place that's not stuffy and has something for everyone: extensive selection of both sushi and cocktails, and happy hour deals even on Saturdays (3-7pm, I believe). Parking is available in nearby lots, or on the street if you're lucky.

I'll second Mashiko - not only is the sushi sustainably sourced, but their Omakase pricing is amazing. Plus getting out to West Seattle means you can head to Hamilton Viewpoint Park and check out the beautiful views of downtown Seattle after dinner.

Another favorite is Sushi Kappo Tamura in Eastlake, just north of downtown. Start with a couple hot appetizers before moving into the sushi, and leave room for dessert - the yuzu panna cotta is excellent.

Wasabi in Belltown is so wonderful. It's slightly more upscale and not exactly a hidden gem. For a more hole in the wall place go to Musashi's in Wallingford/Fremont. AMAZING.
