Where to visit in India for the first time if I love nature and food?

I have 3 weeks for vacation starting this month (January) and would like to visit India.  I  would like to avoid overly touristy destinations for my first time and would like to be exposed to its natural beauty. 

Where should I venture to first and what is there to do?

    Would definitely recommend a visit to Kerala (in the South). Head to the hills ( Munnar ) for the tea plantations and take a trip on a boat in the backwaters around Kochi . The food is excellent and very unique, lots of seafood.

    You should give Sikkim a try. Sikkim is a nice place to visit as it is not full of tourist and the scenic beauty of snow covered Himalayas are just wonderful. If you are interested in going to Sikkim then you should visit Nathu La Pass. It is actually the border or India and China.

    Hey, January is a very good time to visit India due to the pleasant weather :) If you are looking for some peace and quiet I highly recommend Andaman & Nicobar Islands . It has many small and big islands which you can explore - esp havelock island. It is still managed to stay away from commercialization making it a perfect getaway.

    head to Himachal Pradesh

    stay in Vashist for few days rather than Manali. If you got a time of 4 to 5 days head to Kaza visit Chander Taal- Lake of Moon have a stay over there for atleast 2 days it has got very beautiful sky. See the ancient monastaries. Visit Kibber it has got snow leopard very rear species left on earth. it will take almost 12hrs of bus/car ride to Kaza from Manali.

    Much depends on what natural beauty you like - sea/beaches, jungles, hills/mountains, or deserts. For sea/beaches Goa is a good destination but it is usually full of tourists except during monsoon. Andaman is also great for sea and beaches with comparatively less tourists. Andaman is however far away from the mainland India being located in southeastern Bay of Bengal.

    The deserts are exclusively in Rajasthan, and there are many forts too there. But again it's a touristy destination!

    If you like jungles and less tourists, then Dooars in North Bengal is the most ideal destination. It's the foothills of Himalayas where the tribal people live. The greenness, the innumerable tea gardens, the rivers, and the dense jungles will mesmerize you.

    The other advantage in Dooars is that you can easily visit Sikkim, and see the eastern part of the Himalayas in all its splendor including the famous peaks. Sikkim is located at India-China border, and some of the places are simply awesome. Luckily Sikkim is not so much of a touristy destination.

    The hills of Himachal Pradesh at the western flank of Himalayas are also great, but then you won't see the jungles as in Dooars.

    So far food is concerned, India is a country with many varieties. And I'm sure you'll enjoy the food wherever you go.

    Come to my home !! have a mango tree in the backyard and mum makes great food :).. ;). There are occasional snakes too.

    Or you could go to Kanhan or Bharatpur and have great kachouris and dal battis on the way.
